Prepare greens

Rinse the green leaf lettuce under cold water. Spin-dry or pat thoroughly dry, then tear into bite-sized pieces. Place the greens in a large mixing bowl as the base.

Prepare meats and cheese

Slice Genoa salami and uncured smoked ham into thin strips. Shred jack cheese and set aside.

Prepare vegetables and legumes

Thinly slice red onions. Slice banana peppers. If desired, chop tomatoes into bite-sized pieces. Rinse and drain garbanzo beans.

Assemble the chopped salad base

Add the lettuce to the bowl. Evenly distribute the salami, ham, jack cheese, banana peppers, chopped tomatoes, red onions, and garbanzo beans on top. Toss gently to combine without mashing ingredients.

Dressings on the side

Pour Italian dressing into a small pitcher or ramekin on the side. Keep dressing separate so guests can add as desired.

Portion and serve

Divide the salad among 4 plates or bowls. Offer the dressing on the side; toss each portion just before serving if desired.
