Steak Preparation

    Season the Steak

    Pat the ribeye steak dry with paper towels. Season both sides generously with salt and black pepper, allowing it to sit at room temperature for about 30 minutes.

    Sear the Steak

    Heat olive oil in a cast-iron skillet over medium-high heat until shimmering. Add the ribeye steak and sear for about 4-5 minutes on one side without moving it.

    Add Aromatics

    Flip the steak and add crushed garlic cloves and a sprig of rosemary to the skillet. Continue to cook for another 4-5 minutes for medium-rare, basting the steak with the pan juices.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a cutting board for 5-10 minutes before slicing.

    Boil the Potatoes

    Peel and cut the potatoes into quarters. Place them in a large pot, cover with cold water, and add a teaspoon of salt. Bring to a boil, then reduce to a simmer and cook until tender, about 15-20 minutes.

    Prepare the Garlic

    While the potatoes are boiling, peel the garlic cloves and add them to a small saucepan with the butter. Cook over low heat until the garlic is fragrant and soft, about 5 minutes.

    Mash the Potatoes

    Drain the cooked potatoes and return them to the pot. Add the garlic and butter mixture, heavy cream, and season with salt and black pepper. Mash until smooth and creamy.

    Serve

    Spoon the garlic mashed potatoes onto a plate and serve alongside the sliced ribeye steak.
