Making Beef Salami

Prepare the Meat

Cut the beef chuck and pork fatback into small cubes and grind them using a meat grinder.

Mix Ingredients

In a large bowl, combine the ground beef and fat, minced garlic, black pepper, paprika, coriander, salt, red wine, and Instacure #1. Mix well until fully combined.

Stuff Casings

Soak the natural hog casings in water for at least 30 minutes. Rinse them thoroughly. Stuff the meat mixture into the casings, tying off the ends securely.

Cure the Salami

Hang the stuffed salami in a cool, dry place for 2-3 days to allow it to dry and cure.

Slice and Serve

Once cured, slice the salami thinly and serve it with house made accoutrements.

Prepare Accoutrements

In a small bowl, mix the whole grain mustard with olive oil. Arrange sliced baguette, pickles, and fresh herbs on a platter.
