Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, let it cool slightly.

Marinate the Plant-Based Tuna
In a bowl, combine sesame oil and ponzu sauce. Add the plant-based tuna and mix well. Let it marinate for about 15 minutes.

Prepare the Avocado
Slice the avocado in half, remove the pit, and scoop out the flesh. Cut it into thin slices.

Assemble the Towers
In a mold or a ring, layer a portion of sushi rice at the bottom, followed by a layer of marinated plant-based tuna, and then a layer of sliced avocado. Press down gently to hold the layers together. Repeat to create multiple towers.

Garnish and Serve
Carefully remove the mold and place the towers on a plate. Top each tower with black tobiko caviar and a sprinkle of wasabi sprouts. Serve with mango slices and a drizzle of gluten-free sweet soy sauce.
