    Prepare the Vegetables

    Thinly slice the cucumber and carrot into matchsticks. Cut the avocado in half, remove the pit, and slice it into thin wedges.

    Make the Sauce

    In a small bowl, mix the soy sauce, rice vinegar, and maple syrup until well combined.

    Assemble the Rolls

    Place a bamboo sushi mat on a flat surface. Lay a nori sheet shiny side down. Wet your hands and spread 1/2 cup of sushi rice evenly over the nori, leaving about an inch at the top edge. Arrange the cucumber, carrot, and avocado in a line across the bottom third of the rice.

    Roll the Sushi

    Using the mat, carefully roll the nori away from you, tucking in the filling as you go. Moisten the top edge of the nori with a little water to seal the roll. Repeat with the second nori sheet.

    Slice and Serve

    Using a sharp knife, slice the rolls into bite-sized pieces. Sprinkle with sesame seeds and serve with the dipping sauce, wasabi, and pickled ginger, if desired.
