    Prepare Sushi Rice

    Rinse sushi rice under cold water until the water runs clear. Cook rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved. Fold the mixture into the rice and let it cool.

    Prepare Eggplant

    Slice the eggplant into thin strips and marinate in BBQ sauce for 15 minutes. Grill or pan-fry the eggplant on medium heat for about 5-7 minutes until tender and slightly charred.

    Assemble the Maki

    Lay a nori sheet on a bamboo sushi mat. Spread a layer of sushi rice over the nori, leaving a small border at the top. Place grilled eggplant, slices of avocado, and a dollop of vegan cream cheese in the center. Drizzle with sweet soy sauce.

    Roll the Maki

    Using the bamboo mat, carefully roll the nori away from you, pressing gently but firmly to shape the maki. Seal the edge with a little water.

    Slice and Serve

    Use a sharp knife to slice the roll into bite-sized pieces. Sprinkle with sesame seeds and serve with extra sweet soy sauce on the side.
