1. Prepare the Filling
In a mixing bowl, combine shredded crab sticks and softened cream cheese until well blended. Set aside.
2. Prepare the Shrimp
Take each shrimp and place about a tablespoon of the crab mixture on top. Gently press down to adhere. Set aside.
3. Make the Tempura Batter
In a separate bowl, mix the tempura batter mix and water until just combined. Do not overmix; lumps are okay.
4. Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches about 350°F (175°C).
5. Fry the Tempura
Dip each stuffed shrimp into the tempura batter, allowing excess to drip off. Carefully place into the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
6. Serve
Serve the tempura hot, drizzled with honey wasabi and eel sauces. Enjoy your Tidal Wave!
