Preparation and Cooking

    Prepare the Seafood

    Cut the salmon, bigeye tuna, and Dutch yellowtail fillets into bite-sized cubes. Set aside.

    Marinate

    In a bowl, combine the cubed fish, grated ginger, and serrano ponzu sauce. Toss gently to coat and let it marinate for about 15 minutes.

    Prepare BBQ Paper

    Lay out the BBQ paper on a flat surface. Preheat your grill to medium-high.

    Layer the Ingredients

    On the BBQ paper, layer the marinated fish, followed by the sliced shallots and garlic chips.

    Wrap and Grill

    Fold the BBQ paper over to create a sealed packet. Place the packet on the grill and cook for about 10-12 minutes or until the fish is cooked through.

    Serve

    Remove the packet from the grill, carefully open it to avoid steam, and serve the fish hot on a plate. Drizzle any remaining marinade over the top.
