1. Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved. Fold this mixture into the rice gently when it's still warm. Let it cool.
2. Prepare Ingredients
Thinly slice the cucumber and avocado. Slice the burdock root into thin strips. Prepare the crispy salmon skin by frying it in hot oil until golden brown and crispy.
3. Assemble the Rolls
Lay a nori sheet on a bamboo sushi mat. With wet hands, spread an even layer of sushi rice over the nori, leaving a small border at the top. Lay the crispy salmon skin, cucumber, avocado, burdock root, and a small amount of ikura along the center of the rice.
4. Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly. Seal the edge of the nori with a little water. Repeat with the remaining ingredients.
5. Slice and Serve
Using a sharp knife, slice the rolls into 8 pieces. Arrange on a plate, garnish with bonito flakes, and serve with lemon wedges.
