Preparation Steps

Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the rice cooker instructions or on the stove. Once cooked, let it cool slightly.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt over low heat until dissolved. Pour this mixture over the warm rice and gently fold it in. Allow the rice to cool to room temperature.

Prepare Sashimi
Slice the black tuna into thin sashimi pieces. For the aburi sake toro, lightly sear the salmon belly using a kitchen torch or a hot grill, giving it a nice char on the outside while keeping it tender inside.

Prepare Tako and Unagi
For the tako, slice it into thin pieces. If using pre-cooked unagi, slice it into bite-sized pieces. If unagi is raw, grill it until cooked through.

Assemble the Platter
On a large serving platter, arrange the sushi rice shaped into small mounds or nigiri. Top the nigiri with slices of aburi sake toro, tako, and unagi. Arrange the black tuna sashimi slices alongside.

Garnish and Serve
Garnish the platter with black tobiko, wasabi, and pickled ginger. Serve with soy sauce on the side for dipping.
