Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer to a bowl and mix with rice vinegar, sugar, and salt. Let it cool to room temperature.

Assemble the Maki Rolls
Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving a small border at the top. Lay your desired fillings (cucumber, avocado, crab sticks, or fish) in a line along the bottom edge of the rice. Roll the mat away from you, pressing gently to form a tight roll. Seal the edge of the nori with a little water.

Slice the Rolls
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.

Serve
Arrange the sliced maki rolls on a platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
