Prepare the Chicken Filling
In a large skillet, heat a tablespoon of oil over medium heat. Add minced garlic and ginger, sauté for about 1 minute until fragrant. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.

Add Cashews and Peanut Sauce
Stir in the chopped cashews and peanut sauce. Cook for an additional 2-3 minutes until everything is well combined and heated through. Remove from heat.

Prepare Cucumber Sunomono
Thinly slice the cucumber and toss it with a pinch of salt. Let it sit for 5 minutes, then drain excess moisture.

Assemble the Wraps
Take a butter lettuce leaf and fill it with a spoonful of the chicken mixture. Top with cucumber sunomono, julienned carrots, and crispy rice noodles.

Serve with Sauces
Serve the lettuce wraps with sweet chili sauce and sesame noodles on the side for dipping or drizzling.
