Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix the rice vinegar, sugar, and salt in a small bowl until dissolved. Fold this mixture into the warm rice and let it cool.

Prepare Tempura Batter
In a bowl, mix the tempura batter mix with water until smooth. The batter should be consistent but slightly thick.

Assemble the Roll
On a bamboo sushi mat, place a nori sheet shiny side down. Spread a thin layer of sushi rice over the nori, leaving 1 inch at the top. In the center, add a line of diced mango, salmon, and crab meat. Carefully roll the nori away from you, using the mat to keep the roll tight.

Fry the Roll
Preheat oil in a deep frying pan or fryer to 350°F (175°C). Once the roll is formed, dip it into the tempura batter and carefully place it in the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain excess oil on paper towels.

Serve
Slice the roll into 6 pieces. Drizzle with mango sauce before serving. Enjoy your Hawaiian Roll!
