Cook the Sushi Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions, usually with 1.2 cups of water. Once cooked, let it cool to room temperature.

Fry the Onion Rings
Slice onions into rings, dip in a batter of flour, water, and sriracha. Fry until golden brown and crispy. Set aside.

Assemble the Maki
On a bamboo sushi mat, place a sheet of nori shiny side down. Spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top. Layer the cucumber, avocado, sriracha-fried onion rings, and drizzle some vegan mayo and tonkatsu sauce on top.

Roll the Maki
Using the bamboo mat, roll the nori tightly away from you, applying gentle pressure. Seal the edge with a bit of water. Repeat for the remaining sheets.

Slice and Serve
Using a sharp knife, slice each roll into 5 pieces. Arrange on a plate and serve with additional vegan mayo, tonkatsu sauce, and BBQ paper.
