Prepare the Filling
In a mixing bowl, combine the toasted and chopped cashews with the raspberry purée and chocolate syrup. Mix well until fully combined.

Assemble the Spring Rolls
Take a wonton wrapper and place about 1 tablespoon of the filling in the center. Fold the wrapper over the filling to form a triangle, then wet the edges with a little water and seal tightly. Repeat with the remaining wrappers and filling.

Fry the Spring Rolls
In a deep frying pan or pot, heat the oil over medium heat. Once hot, carefully add 3-4 spring rolls at a time, frying until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Serve
Dust the fried spring rolls with powdered sugar. Serve warm alongside scoops of vanilla ice cream and additional raspberry purée and chocolate syrup for drizzling.
