Prepare greens
Wash and dry the napa cabbage, romaine, and radicchio. Core and thinly slice the napa cabbage into ribbons to measure 3 cups. Chop romaine into bite-sized pieces for 2 cups. Thinly slice radicchio to yield 1 cup. Place all three in a large mixing bowl.

Add aromatics and protein
Thinly slice scallions and add all (about 3 tablespoons) to the bowl. Add 2 cups of shredded cooked chicken breast, breaking up any large pieces so the chicken distributes evenly.

Add crunchy elements
Reserve about 1/4 cup of the wonton strips for topping (optional). Add the remaining 3/4 cup crispy wonton strips to the bowl so some crunch is incorporated throughout the salad. Sprinkle 2 teaspoons toasted sesame seeds into the salad and gently toss to combine after dressing is added.
Sesame Honey Dressing

Whisk base ingredients: In a small bowl or jar combine 3 teaspoons mayonnaise, 2 teaspoons plain Greek yogurt, 1.5 tablespoons light soy sauce, and 1 tablespoon rice vinegar. Whisk until smooth.

Add sweet and savory elements: Add 2 teaspoons honey, 1 teaspoon toasted sesame oil, 1 teaspoon neutral oil, and 1 teaspoon fresh lemon juice. Whisk to emulsify.

Add aromatics and season: Stir in 1/2 teaspoon minced garlic, 1/2 teaspoon grated fresh ginger, 1/2 teaspoon sesame seeds, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Taste and adjust: add up to 1 teaspoon water if the dressing is too thick, or more honey/soy/lemon to balance sweetness/salt/acidity.

Optional texture: For a smoother dressing, blend briefly in a small blender or use an immersion blender for 5–10 seconds.

Finish and serve: Top with the reserved wonton strips for extra crunch and the remaining toasted sesame seeds. Taste and season with a pinch more salt or pepper if needed. Serve immediately to preserve crunch.
