Preparation Steps
1. Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, let it cool and season with a mixture of rice vinegar, sugar, and salt.
2. Prepare Fillings
Dice the bigeye tuna and mix it with spicy mayo to taste. Shred the imitation crab meat and combine it with some spicy mayo as well. Julienne the cucumber and slice the avocado.
3. Assemble the Rolls
Lay a sheet of nori on a bamboo sushi mat. Spread a layer of sushi rice over the nori, leaving about an inch at the top. Place a line of spicy tuna, crab mix, cucumber, and avocado in the center of the rice. Roll the sushi tightly from the bottom up, using the mat to help.
4. Cut and Serve
Using a sharp knife, slice the roll into 8 pieces. Sprinkle sesame seeds on top and serve with soy sauce for dipping.
