1. Prepare the Meat

Season the chuck roast with salt and pepper on all sides.

2. Sear the Roast

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the roast and sear it for about 4-5 minutes on each side until browned. Remove the roast and set aside.

3. Sauté Vegetables

In the same pot, add chopped onion and minced garlic. Sauté until onions are translucent, about 3 minutes.
