Preparation

Preheat your oven to 375°F (190°C). Rinse the chicken and pat it dry with paper towels. Season the chicken inside and out with salt and pepper.

Cook the Chicken

Place the chicken in a roasting pan and pour 2 cups of chicken broth over it. Cover the pan with aluminum foil and roast in the preheated oven for about 1 hour.

Prepare the Dressing

In a large skillet, melt the butter over medium heat. Add the chopped onion and celery, and sauté until softened, about 5-7 minutes. Stir in the sage and thyme.

Combine Ingredients

In a large bowl, combine the cornbread dressing mix with the sautéed onion and celery mixture. Add the remaining 2 cups of chicken broth and mix well. Adjust seasoning with salt and pepper if needed.

Bake the Dressing

Take the chicken out of the oven and remove the foil. Stuff the dressing mixture inside the chicken cavity and place the remaining dressing in a separate baking dish. Return both to the oven and bake for an additional 30-40 minutes, until the chicken is cooked through and the dressing is golden brown.

Serve

Once done, let the chicken rest for 10 minutes before carving. Serve the chicken with the dressing on the side.
