1. Prepare the Spinach

In a large skillet over medium heat, wilt the fresh spinach until just tender. This should take about 2-3 minutes. Remove from heat and set aside.

2. Mix the Cheeses

In a mixing bowl, combine the pepper jack cheese, cream cheese, sour cream, diced tomatoes (with juices), garlic powder, onion powder, cumin, salt, and black pepper. Stir until well blended.

3. Combine Ingredients

Fold the wilted spinach into the cheese mixture until evenly incorporated.

4. Heat the Mixture

Transfer the mixture to a baking dish or oven-safe skillet. Bake in a preheated oven at 350°F (175°C) for about 20 minutes, or until bubbly and golden on top.

5. Serve

Remove from the oven and serve hot with tortilla chips on the side for dipping.
