    Prep the Spinach

    Wash the fresh spinach thoroughly under cold water. Remove any tough stems. In a large pot, bring a small amount of water to a boil and blanch the spinach for 2-3 minutes until wilted. Drain and chop finely.

    If using canned artichoke hearts, drain and chop them into small pieces. If using frozen artichokes, thaw them and chop them similarly.

    In a large mixing bowl, combine the cream cheese, sour cream, and mayonnaise. Mix with a hand mixer or spatula until smooth and creamy.
