Preparing the Vegetables

Wash and Cut the Vegetables
Thoroughly wash all the vegetables under cold running water. Peel the carrots and cut them into sticks. Cut the celery into 3-inch pieces, slice the cucumber into rounds, and cut the bell peppers into strips. Halve the cherry tomatoes and trim the tops off the radishes.

Arrange the Vegetables
On a large serving platter, arrange the prepared vegetables in sections or in a colorful pattern to create an appealing display.
Making the Roasted Garlic Dressing

Roast the Garlic
Preheat your oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and drizzle with a bit of olive oil. Roast in the oven for 30 minutes, or until the cloves are soft and golden.

Blend the Dressing
Once the garlic is roasted and cooled slightly, squeeze the cloves out of their skins into a blender. Add the olive oil, lemon juice, Dijon mustard, salt, and black pepper. Blend until smooth and creamy.

Serve
Transfer the roasted garlic dressing to a small bowl and serve alongside the arranged vegetable platter for dipping.
