Braised Goat
Add vegetable broth to the pot, cover, and reduce heat to low. Simmer for 2-3 hours until the goat is tender and easily shredded.

Make the Peanut Sauce
In a separate bowl, whisk together peanut butter, coconut milk, soy sauce, lime juice, and red pepper flakes until smooth. Adjust seasoning with salt and pepper to taste.

Cook the Noodles
In a pot of boiling salted water, cook the udon noodles according to package instructions. Drain and set aside.

Combine and Serve
Once the goat is cooked, shred it and stir it into the peanut sauce. Add the cooked udon noodles and mix well. Serve hot, garnished with fresh cilantro.
