    Prepare the Vegetables

    Wash and peel the carrots, then julienne them. Chop the cabbage, bell pepper, and red onion into thin strips. Mince the garlic.

    Combine Ingredients

    In a large bowl, combine the julienned carrots, chopped cabbage, bell pepper, red onion, minced garlic, and whole scotch bonnet pepper.

    Make the Brine

    In a separate bowl or saucepan, mix the white vinegar, salt, black peppercorns, and thyme. Stir until the salt dissolves.

    Pickling Process

    Pour the vinegar brine over the vegetable mixture. Ensure all vegetables are submerged. Cover the bowl with plastic wrap or transfer to a jar.

    Refrigerate

    Let the pikliz sit in the refrigerator for at least 24 hours before serving to allow the flavors to meld. It can be stored for up to a month.
