Prepare the Marinade
In a bowl, mix together the tamarind paste, honey, soy sauce, apple cider vinegar, minced garlic, olive oil, salt, and black pepper until well combined.

Marinate the Mushrooms
Place the maitake mushrooms in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes, preferably longer if time allows.

Prepare the Sauce
While the mushrooms are cooking, simmer the reserved marinade in a small saucepan over medium heat for about 5-7 minutes until it thickens slightly.
