Cooking Instructions

  1. 1

    Prepare the Marinade

In a bowl, mix together the tamarind paste, honey, soy sauce, apple cider vinegar, minced garlic, olive oil, salt, and black pepper until well combined.

  2. 2

    Marinate the Mushrooms

Place the maitake mushrooms in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes, preferably longer if time allows.

  3. 3

    Cook the Mushrooms

Preheat a grill or skillet over medium-high heat. Remove the mushrooms from the marinade (reserve the marinade) and grill or sauté them for about 4-5 minutes on each side until they are tender and slightly charred.

  4. 4

    Prepare the Sauce

While the mushrooms are cooking, simmer the reserved marinade in a small saucepan over medium heat for about 5-7 minutes until it thickens slightly.

  5. 5

    Serve

Plate the grilled maitake mushrooms, drizzle with the thickened tamarind BBQ sauce, and top with chopped dates. Serve immediately with pikliz and lebna on the side.
