Cheesecake Directions
- 1
Prepare the crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, 0.5 cups of sugar, and melted butter until combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- 2
Make the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar, mixing until well combined. Add the sour cream, vanilla extract, and lemon juice, mixing until smooth. Add the eggs one at a time, mixing on low speed until just combined.
- 3
Combine and bake
Pour the cream cheese mixture over the prepared crust in the springform pan. Bake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly.
- 4
Cool and chill
Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for about 1 hour. Remove from the oven and refrigerate for at least 4 hours or overnight before serving.
