Preparation and Cooking

    Prep the Potatoes

    Wash and peel the Russet potatoes. Cut them into evenly sized sticks, about 1/4 inch thick.

    Blanch the Potatoes

    In a large pot, bring 8 cups of water to a boil. Add 2 tablespoons of salt and the cut potatoes. Blanch for about 3-5 minutes until slightly tender but not fully cooked. Drain and let them cool for a few minutes.

    Heat the Oil

    In a deep fryer or large heavy-bottomed pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the blanched potatoes to the hot oil in small batches. Fry until golden brown and crispy, about 4-6 minutes. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with the Caribbean herb blend, tossing to coat evenly.
