Prepare the Vegetables
Peel and dice the Yukon Gold potatoes, sweet potatoes, and carrots into bite-sized pieces.

Cook the Vegetables
In a large pot, bring salted water to a boil. Add the diced vegetables and cook until tender, about 10-15 minutes. Drain and set aside.

Make the Cream Sauce
In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the heavy cream, nutmeg, salt, black pepper, and paprika. Bring to a gentle simmer.

Combine and Layer
In a large mixing bowl, combine the cooked vegetables with the cream sauce. Transfer the mixture into a greased baking dish. Top with shredded cheddar cheese and grated Parmesan cheese.

Bake
Preheat the oven to 375°F (190°C). Bake the au gratin for 25-30 minutes, or until the cheese is golden and bubbly.
