    Roasting the Peppers

    Preheat the oven to 425°F (220°C). Cut the poblano peppers in half and remove the seeds and stems. Place them on a baking sheet, cut side down, and brush with olive oil. Roast in the oven for about 20 minutes, or until the skin is blistered and charred.

    Peeling the Peppers

    Remove the roasted peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap and let them steam for about 10 minutes. Once cooled, peel off the charred skin and slice the peppers into strips.

    Combining Ingredients

    In a skillet over medium heat, add the roasted poblano strips. Sprinkle with salt, black pepper, garlic powder, and onion powder. Stir to combine and cook for 2-3 minutes.

    Adding Cheese

    Reduce the heat to low and sprinkle the Monterey Jack cheese over the poblano strips. Cover the skillet with a lid and let it cook for another 3-5 minutes, or until the cheese is melted and bubbly.

    Remove from heat and serve warm as a side dish or topping for tacos, burritos, or nachos.
