    Prepare the Marinade

    In a bowl, combine the guajillo chiles (stemmed and seeded), pineapple juice, garlic cloves, cumin, oregano, and salt. Blend until smooth to create a marinade.

    Marinate the Pork

    Place the pork shoulder in a large resealable bag or dish. Pour the marinade over the pork, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat your oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Cover with foil and bake for about 3 hours, or until the pork is tender and easily shredded.

    Shred the Pork

    Once the pork is cooked, remove it from the oven and let it rest for 15 minutes. Then, shred the pork using two forks.

    Warm the corn tortillas in a skillet or microwave. Fill each tortilla with shredded pork, and top with fresh cilantro, diced onion, and a squeeze of lime juice.
