    Searing the Beef

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Once the oil is hot, add the beef and sear on all sides until browned, about 5-7 minutes. Remove the beef and set aside.

    Sautéing Aromatics

    In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.

    Adding Ingredients

    Stir in the chili powder, cumin, and paprika. Add the canned diced tomatoes and beef broth, and bring to a simmer.

    Cooking the Beef

    Return the seared beef to the pot. Cover and reduce the heat to low. Let it cook for about 2-3 hours, or until the beef is tender and easily shreds with a fork.

    Shredding the Beef

    Once the beef is cooked, remove it from the pot and shred it using two forks. Return the shredded beef to the pot and stir to combine with the sauce.

    Taste the sauce and adjust seasoning with additional salt and pepper if needed. Serve hot.
