1. Pop the Corn
In a large pot, heat the vegetable oil over medium heat. Add a few popcorn kernels and cover the pot. Once the kernels pop, add the rest of the popcorn kernels in an even layer. Cover the pot and shake it occasionally to ensure even popping. Once popping slows down, remove from heat.
2. Prepare the Coating
In a small saucepan, melt the butter over low heat. Once melted, add the granulated sugar, salt, and vanilla extract. Stir continuously until the mixture is smooth and slightly thickened, about 5 minutes.
3. Combine
Pour the butter and sugar mixture over the popped popcorn. Stir gently to coat all the popcorn evenly.
4. Cool and Serve
Spread the coated popcorn on a baking sheet lined with parchment paper to cool for about 10 minutes. Once cooled, break into pieces and serve.
