Preparation Steps
1. Prepare the Braised Short Rib
In a pot, braise the short ribs with beef broth, onions, garlic, and herbs until tender. Shred the meat and set aside.
2. Caramelize the Onions
In a skillet, melt butter over medium heat, add sliced onions, and cook until caramelized, about 15-20 minutes.
3. Make the Fines Herbs Aioli
In a bowl, mix mayonnaise, chopped parsley, chives, tarragon, minced garlic, lemon juice, salt, and pepper. Adjust seasoning to taste.
4. Cook the Beef Patty
Form the ground beef into 2 patties and season with salt and pepper. Heat a skillet over medium-high heat and cook the patties for about 3-4 minutes on each side. Add gruyere cheese on top of the patties in the last minute of cooking to melt.
5. Assemble the Frenchie
Spread fines herbs aioli on the bottom half of the brioche bun. Layer with the beef patty, shredded braised short rib, caramelized onions, and pickle slices. Top with the other half of the bun.
