Marinate the Chicken
In a large bowl, combine the buttermilk and hot sauce. Add the chicken thighs, ensuring they are fully submerged in the mixture. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
Prepare the Coating
In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper until well combined.
Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Coat the Chicken
Remove the marinated chicken thighs from the buttermilk mixture, letting any excess drip off. Dredge each thigh in the flour mixture, making sure they are well coated.
Fry the Chicken
Carefully place the coated chicken thighs into the hot oil. Fry in batches if necessary to avoid overcrowding. Cook for 8-10 minutes on each side, or until the chicken is golden brown and the internal temperature reaches 165°F (75°C).
Drain and Serve
