Prepare the Pork
In a slow cooker, combine the pork shoulder with salt, black pepper, garlic powder, onion powder, and apple cider vinegar. Rub the spices all over the meat.

Slow Cook the Pork
Cover and cook on low for 8 hours, or until the pork is tender and easily shreds with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix it back with the juices and BBQ sauce.

Prepare the Hoagies
Slice the sourdough hoagies open and toast them lightly. Spread mayo on one side and mustard on the other.

Assemble the Sandwich
Fill the hoagies with the pulled pork mixture, top with Swiss cheese, and add caramelized onions and pickles before closing the sandwich.
