Brewing Process

Mashing
Heat 10 liters of filtered water to 68°C (155°F). Add the pale malt, caramel malt, and flaked rice. Maintain this temperature for 60 minutes to allow the grains to convert starches into sugars.

Sparging
After mashing, sparge the grains with hot water to rinse off the sugars. Collect the wort in a kettle.

Boiling
Bring the wort to a boil. Add the bittering hops and boil for 60 minutes. Add the aroma hops for the last 10 minutes of the boil.

Cooling
Cool the wort quickly to approximately 10°C (50°F) using a wort chiller.

Fermentation
Transfer the cooled wort to a fermentation vessel and pitch the lager yeast. Seal the vessel and let it ferment at 10°C (50°F) for 2-3 weeks.

Conditioning
After fermentation is complete, transfer the beer to a conditioning tank to carbonate. Let it condition for an additional 2 weeks.

Bottling
Once conditioned, bottle the beer with priming sugar to carbonate in the bottles. Allow it to carbonate for another 2 weeks at room temperature.
