Preheat the Oven

Preheat your oven to 375°F (190°C) and grease a mini muffin pan or line it with mini muffin liners.

Mix Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, ground cinnamon, and salt until well combined.

Combine Wet Ingredients

In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

Fill Muffin Pan

Spoon the batter into the prepared mini muffin pan, filling each cup about 2/3 full. Sprinkle the tops with brown sugar and an additional pinch of cinnamon.

Bake

Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve

Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Serve warm.
