Cooking the Home Fries

Prepare the Home Fries
In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook until golden brown and tender, about 15-20 minutes. Stir occasionally. Add diced onion, salt, and pepper; continue cooking until onions are translucent. Set aside.
Making the Omelet

Cook the Omelet
In a bowl, whisk together eggs, salt, and pepper. In a non-stick skillet, melt butter over medium heat. Pour the egg mixture into the skillet and cook until the edges begin to set. Using a spatula, gently lift the edges to allow uncooked egg to flow underneath. Cook until almost set, about 3-4 minutes.

Add Cheese and Fillings
Sprinkle the cheddar cheese on one half of the omelet. Add any optional toppings of your choice. Carefully fold the other half over the filling and let cook for another minute until cheese is melted.

Prepare the Toast
While the omelet is cooking, toast the Red Hen bread slices and spread butter on top.
