Steak

Mushroom Shoyu Cream

Black Garlic Aioli

Method

Steak

  1. 1

    Cook the Steak

Season the teres major steak with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for medium-rare. Let rest for 5 minutes before slicing.

Mushroom Shoyu Cream

  1. 2

    Prepare the Sauce

In the same skillet used for the steak, add butter and mushrooms. Cook until mushrooms are browned. Add minced garlic and cook for another minute. Stir in soy sauce and heavy cream, and simmer until thickened. Season with salt and pepper to taste.

Kale

  1. 3

    Sauté the Kale

In a separate pan, heat olive oil over medium heat. Add chopped kale and salt. Sauté until wilted and tender, about 5-7 minutes.

Black Garlic Aioli

  1. 4

    Make the Aioli

In a bowl, mix together mashed black garlic, mayonnaise, lemon juice, and salt. Adjust seasoning as needed.

French Fries

  1. 5

    Fry the Potatoes

Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the cut potatoes in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels and season with salt.
