Pork Belly Preparation

Slow Cook the Pork Belly
Rub the pork belly with salt, black pepper, smoked paprika, garlic powder, and onion powder. Place in a slow cooker with apple cider vinegar and chicken broth. Cook on low for 8 hours until tender.
Fried Green Tomatoes

Prepare and Fry Tomatoes
Slice green tomatoes into 1/2 inch thick slices. Set up a breading station with buttermilk, flour, and cornmeal. Dip each slice in buttermilk, then dredge in flour, and finally coat with cornmeal. Heat vegetable oil in a skillet over medium heat and fry the tomato slices until golden brown, about 3-4 minutes per side. Drain on paper towels.
Sweet Pepper Relish

Make the Relish
Chop the sweet bell peppers and red onion. In a saucepan, combine chopped peppers, onion, apple cider vinegar, sugar, and salt. Bring to a boil, then simmer for 10 minutes. Let cool.
Aioli Preparation

Prepare the Aioli
In a bowl, mix mayonnaise, minced garlic, lemon juice, and salt until well combined. Set aside.
Assembling Sliders

Assemble the Sliders
Slice the slider buns in half. Layer with pieces of slow-cooked pork belly, a slice of fried green tomato, a spoonful of sweet pepper relish, and a dollop of aioli. Top with the other half of the bun and serve.
