Method

Roasting the Tomatoes

  1. 1

    Prepare the Tomatoes

Preheat your oven to 400°F (200°C). Cut the Roma tomatoes in half and place them cut-side up on a baking sheet.

  2. 2

    Season and Roast

Drizzle the tomatoes with olive oil, sprinkle with salt, black pepper, and fresh basil. Roast in the oven for 25-30 minutes until they are tender and slightly caramelized.

Poaching the Eggs

  1. 3

    Prepare for Poaching

Bring a pot of water to a gentle simmer and add vinegar. Crack each egg into a small bowl.

  2. 4

    Poach the Eggs

Gently slide each egg into the simmering water and poach for 3-4 minutes until the whites are set and the yolks are still runny. Remove with a slotted spoon and place on a paper towel.

Making the Hollandaise Sauce

  1. 5

    Whisk the Egg Yolks

In a heatproof bowl, whisk together egg yolks and lemon juice until thick and pale.

  2. 6

    Melt the Butter

In a saucepan, melt the butter slowly until it is completely melted but not browned.

  3. 7

    Combine and Blend

Slowly drizzle the melted butter into the egg yolk mixture while whisking constantly until the sauce is thick. Season with salt and a pinch of cayenne pepper.

Assembling the Dish

  1. 8

    Toast the Muffins

Toast the English muffins until golden brown.

  2. 9

    Assemble Eggs Benedict

On each muffin half, place slices of avocado, followed by a roasted tomato, a poached egg, and finish with a generous drizzle of hollandaise sauce.

  3. 10

    Serve

Serve immediately with additional basil on top if desired.
