Chowder Preparation

    Cook the Bacon

    In a large pot, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the rendered fat in the pot.

    Sauté Vegetables

    Add butter to the pot with bacon fat. Add the onions, celery, and carrots, and sauté until softened, about 5 minutes. Stir in garlic and cook for another minute.

    Add Stock and Seasonings

    Pour in the fish stock, add bay leaves, thyme, salt, and black pepper. Bring to a simmer.

    Add Seafood

    Stir in the market seafood mix and heavy cream. Simmer gently for about 10-15 minutes, until seafood is cooked through. Remove bay leaves.

Crouton Preparation

    Make the Croutons

    Preheat oven to 375°F (190°C). Toss brioche cubes with olive oil, garlic powder, and salt. Spread on a baking sheet and bake for about 10-12 minutes, until golden and crispy.

Serving

    Serve the Chowder

    Ladle the seafood chowder into bowls, top with croutons, and crumble the reserved bacon on top. Enjoy!
