Brioche French Toast
Prepare the Egg Mixture
In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
Soak the Brioche
Dip each slice of brioche bread into the egg mixture, making sure both sides are coated. Let them soak for a few seconds.
Cook the French Toast
In a large skillet, melt the butter over medium heat. Add the soaked brioche slices and cook for about 3-4 minutes on each side, or until golden brown.

Cook the Berries
In a small saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Cook for about 5-7 minutes, stirring frequently, until the berries break down and form a sauce.
Assembly
Serve the French Toast
Place the cooked brioche French toast on plates. Top with mixed berry compote, a generous sprinkle of granola, a dollop of whipped cream, and drizzle with Vermont maple syrup.
