    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to resemble traditional French fries.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove any excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can use a thermometer to check the temperature.
