Cider Preparation

    Prepare the Apples

    Wash and chop the fresh apples into quarters, removing the cores.

    Juicing the Apples

    In a large pot, combine the chopped apples and water. Bring to a boil and then simmer for about 30 minutes, mashing the apples occasionally to release their juice.

    Strain the Juice

    Once the apples are soft, strain the mixture through a fine mesh sieve or cheesecloth into a separate bowl to extract the juice.

    Add Sugar and Lemon

    Return the juice to the pot, add sugar, lemon juice, and cinnamon sticks. Stir well and heat until the sugar has dissolved.

    Cool and Ferment

    Let the cider cool to room temperature before transferring it to fermentation vessel. Add yeast and seal the vessel with an airlock. Allow it to ferment for 1-2 weeks.

    Boil the Water

    In a large pot, bring 8 cups of water to a boil.

    Add Malted Barley

    Once boiling, remove from heat and add the malted barley. Let it steep for 30 minutes.

    Add Hops

    After steeping, bring the mixture back to a boil and add the hops. Boil for an additional 15-20 minutes.

    Cool the Wort

    Remove from heat and cool the wort quickly in an ice bath.

    Fermentation

    Once cooled, transfer to a fermentation vessel, add yeast, and seal with an airlock. Allow it to ferment for 1-2 weeks.
