Prepare the Chicken
In a bowl, combine the flour, cornstarch, baking powder, salt, black pepper, garlic powder, onion powder, and paprika. In another bowl, pour the buttermilk over the chicken thighs and marinate for at least 30 minutes.

Coat the Chicken
Once marinated, remove the chicken from the buttermilk. Dredge each piece in the flour mixture until fully coated. Shake off excess flour.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the chicken pieces in batches, frying until golden brown and crispy, about 6-8 minutes per side. Remove and drain on paper towels.

Make the Dill Ranch
In a bowl, mix together the mayonnaise, sour cream, dill weed, garlic powder, onion powder, lemon juice, salt, and pepper. Adjust seasoning to taste.
