Preparation

  1. 1

    Prepare the Asparagus

Trim the ends of the asparagus and toss them in olive oil, salt, and pepper. Set aside.

  2. 2

    Roast the Tomatoes

Preheat the oven to 400°F (200°C). Place cherry tomatoes on a baking sheet, drizzle with olive oil, salt, and pepper, and roast for about 15-20 minutes until they are charred and blistered.

  3. 3

    Make Ciabatta Crumbs

While the tomatoes are roasting, tear the ciabatta bread into small pieces and toast them in a pan over medium heat until golden brown and crispy. Set aside.

Assembly

  1. 4

    Grill the Asparagus

Heat a grill pan over medium-high heat. Grill the asparagus for about 5-7 minutes, turning until they are tender and have grill marks.

  2. 5

    Assemble the Dish

On a serving plate, arrange the grilled asparagus. Top with the charred cherry tomatoes, dollops of burrata cheese, a drizzle of aged balsamic vinegar, and sprinkle with ciabatta crumbs.
