Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain and pat dry the soaked fries. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch.

Drain and Season
Remove the fries from the oil and drain on a paper towel. Immediately season with salt and black pepper.

Add Truffle Oil and Parmesan
Drizzle the fries with truffle oil (to taste) and sprinkle generously with grated Parmesan cheese while they are still hot.

Serve
Serve the truffle and Parmesan fries hot, garnished with additional Parmesan if desired.
