Prepare the Pork
Season the pork shanks with salt and black pepper on all sides.

Sear the Meat
In a large Dutch oven, heat olive oil over medium-high heat. Add the pork shanks and sear until browned on all sides, about 8-10 minutes. Remove the meat and set aside.

Deglaze the Pot
Pour in the white wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer and let it cook for about 3 minutes.

Combine Ingredients
Return the pork shanks to the pot. Add beef broth, bay leaves, thyme, and additional salt and pepper as needed. Bring to a boil.

Slow Cook
Reduce heat to low, cover, and let simmer for about 2 to 2.5 hours or until the meat is tender and falling off the bone.

Serve
Remove bay leaves before serving. Serve the osso bucco with gremolata or over risotto or polenta if desired.
