    Prepare the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are cracked or open.

    Infuse the Saffron

    In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their flavor.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallots, and sauté until softened and fragrant, about 3-4 minutes.

    Add Wine and Saffron

    Pour in the dry white wine and add the saffron mixture. Season with salt and black pepper to taste. Bring the mixture to a simmer.

    Cook the Mussels

    Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

    Remove the pot from heat, stir in fresh parsley, and serve the mussels in their broth with crusty bread for dipping.
